Upon the warm waves of a tropical forest, a delicate banana twist washes up on your shore. A true salty and sweet classic, this flavor was a perfect blend of a pure, overripe banana flavor and a light salted caramel that highlighted the fruity undertones of the banana.
Blueberry Caramel Sundae

A classic sundae, this flavor was a bit underwhelming. The caramel was not present, and it was mostly a blueberry sundae. The overwhelming presence of sugar, and lack of tartness made it hard to balance.
Italian Sour Cherry Sundae

Another Bar Ape sundae, the sour cherry helped balance the plain vanilla flavor of the sundae. It could have used a bit more tartness in the flavor, but it was overall a wonderful sundae.
Orange Creamsicle Bar

Your basic gelato bar, I think it was very good for what it was, but I expected a stronger contrast between the orange and cream flavors. It seemed more like a blend of milk gelato and orange chocolate more than anything.
Mango & Natural Yogurt Twist

A bit reminiscent of Mango Lassi, the blend of these two flavors connect a bright mango towards the natural aromas of warm milk. A bit of tart and sour, combined with the fruity mango made it a classic collection of flavors. I would have preferred for it to be a bit more tart to highlight the yogurt flavor better.

A fruitful blend of Alphonso mangos surround this tropical flavor. It was very refreshing and well executed, and was distinctly fruity and faintly floral. It may be improved by adding a hint of salt to the notes to bring out that floral undertone. I will say it was a bit muted in that regard.

A titillating flavor of sorts, the olive oil flavor was a true highlight of the capabilities of well executed ice cream. It combines that classic creamy Bar Ape gelato soft serve, and adds a velvety touch with a light olive oil flavor, reminiscent of a floral and green frolic on the California Coast. Truly a unique flavor – don’t knock it until you can try it. A bit salty too, but if you can add your own salt, I’d imagine it would elevate the flavors even more.
Ricotta Lemon

Warm, melancholy of a field of lemon groves in a fading summer heat – Ricotta Lemon blends in the sunshine of a quiet, blazing hot summer afternoon, and adds in that delicate twist of creamy ricotta to add a bit of warmth to kick in the evening. It’s a dreamy lemon; an ode to a warm summer night ahead. The ricotta adds a touch of creamy sourness that hits the right notes, highlighting the lemon’s tart and floral taste.
Earl Gray

A linear flavor of vanilla, and a hint of lavender underneath a question of black tea, Earl Gray was a hint of woebegone, floating teas on a gray Vancouver day. I would have preferred a stronger floral flavor, coming from a bergamot base. I didn’t really get that from this flavor, but I’d love to see them execute it again.

Beautiful. The pomegranate brings a strong, swift kick of tartness right to your mouth, highlighting the juiciness of each seed that went into making this flavor. It’s a true representation of a bright, bold fruit that is combined with the warmth, nuttiness, and hint of salt that is Pistachio. They somehow work well together, each highlighting their truths in this world. I don’t think they would have gotten a better review if they were identified separately, but together they highlight each other enough to bump up their score.
Peach Yuzu Sundae

The power of peach capsizes this sundae, which features almost no yuzu – a flavor that typically overwhelms with its bright floral and fruity shine. If this was a linear peach sundae, I would be happy. Albeit disappointed, this is a reminder that competition is important to achieving a delicate profile.

Was anyone a bit surprised with the fact that Limeleaf tastes like Froot Loops? I never really paid much attention to that fact, but since Froot Loops are my favorite cereal, I had to give this a try. The first thing that hits you is the milky flavor of Froot Loops… so they’re valid for that. Has a hint of a vaguely floral aftertaste at the end. The base flavor turns a bit nutty after a while. A interesting flavor, but a bit linear in profile.
Black Sesame & Okinawa Lime Twist

🌿 Okinawa Lime
A segregated blend of Black Sesame and Okinawa Lime join us in matrimony. The Black Sesame was a well executed flavor, but a standard one at that. A subtle tangy and floral aroma is enveloped by the strong Lime flavor of the Okinawa Lime – with the texture of a sorbetto. Although connected, the flavor doesn’t outright remind of Yuzu, but happens to glance upon it. Combined however, I fear that it was a bit of a far graze than a strong glance. The sorbetto-like texture of the Okinawa Lime, combined with the strong lime flavor did not reveal the intricacies of Black Sesame, which stripped its flavor and abused itself in a pattern of tart. If the Black Sesame was toasted, and a stronger floral presence was detected, it would’ve kept these two flavors in sync – alas, it wasn’t meant to be.
Chocolate Chip Cookie Dough Bar

Honestly, a pretty Plain Jane gelato bar. However, it’s a well executed cookie dough bar — not too chocolatey, a very decent amount of cookie dough that’s not super overpowering with a classic vanilla gelato base. Some may find it disappointing, but it’s a classic gelato bar done right ; decadent, but not overpowering, with a broad tapestry for textures.
Fresh Mint & Chocolate Twist

Inoffensive and delicate, Fresh Mint serves as the gateway to a classic flavor combination. In this case however, it’s hard to say if it can supplicate for a symbiotic relationship with its counterpart. Chocolate arrives in a tsunami-like wave – in fashion, but not needed for the moment. Alas, while Fresh Mint provided a light and innocuous graze of refreshing flavor, its peaceable attitude towards life was bulldozed over by an unnoticeable, yet belligerent chocolate flavor. This twist is akin to two parallel lines that should never intersect.
Pink Grapefruit & Sweet Cream Twist

A light pink dream wafts into your inner consciousness with this flavor. A light, wafting hint of grapefruit sits with itself, mesmerized by the dreamy, yet creamy Sweet Cream. While complimentary, I’m not sure why Pink Grapefruit decided to not to submerge itself into the flavor pool. Are you required to push yourself to your limit? No, but it’s puzzling why Pink Grapefruit decided to sit this one out today. Overall, I would have enjoyed it more if the Pink Grapefruit flavor wasn’t just a form of mild tartness.
Coffee Bar

On a smoggy summer’s eve, the smoke lifts to reveal a gentle covering of coffee and chocolate together. A light chocolate coating envelopes a warm, fleeting coffee cream that bites, leaving a bitter punch behind. A light, floral note lingers on the back of the tongue – unsure if it comes from the chocolate, or the coffee. A bit unassuming, but well executed. Chocolate coating highlights light coffee bean specks, which burst additional coffee flavor into the void. Altogether, a solid flavor in the pack, but ultimately not earning a place in the front row.

As the morning sun transpires onto a fruit field, Ontario Strawberry arises with a fresh, industrious flavor. Despite being a vegan flavor, the creaminess melts a strong and bright strawberry flavor – it truly feels like you’re biting into a juicy, lustrous berry. Although a simple flavor, the effect of this flavor is profound – one of the stellar examples of strawberry done right. Points off as strawberries are not my favorite fruit.
Ontario Strawberry & Buttermilk Twist

A poignant return of a beloved classic, the Ontario Strawberry and Buttermilk Twist reveals a perhaps unfazed tryst between two flavors. The buttermilk returns a delicate, almost yogurt like flavor, while the strawberry returns a classic fresh berry bite. While I prefer the strawberry salsa on its own accord, this twist is not what I would consider to be tort. The buttermilk highlights a hint of sour in strawberry’s shadow, a farewell of sorts to another summer day.
Blended Cookies & Cream

Is Blended Cookies and Cream not just milk chocolate? That’s what I thought last year when I grazed upon this flavor, and chose to savor the peach instead. This year however, I landed on this blend’s doorstep. It’s a more delicate chocolate, I fear. I don’t see the vision of a cookie with a touch of cream, but I do think this is a wonderfully light gelato. The blend provides a cream forward flavor with a light touch of chocolate – perfect for ones who may enjoy a lighter vision for chocolate.

As summer blossoms, so does Pineapple. In Pineapple’s fruitful treasure, it reveals a tart, almost citrine colored serving. Pineapple provides a tart, yet fruitful challenge to the plethora of fruits that have arrived on our shores. Even as a fresh new arrival, it somehow manages to outshine many of its peers. On this tropical island, Coconut and Pineapple immerse themselves in a pool of palm trees and “Dosas and Mimosas”. Pineapple’s tart head collides with Coconut’s sweet shadow. When life gives you lemons, you can make many things. I chose to make nothing, and instead lose six dollars to Bar Ape’s Lemon flavor. A flavor evocative of a suburban lemonade stand on a ninety degree day, Lemon punches you with the tart taste of life. A more slushy flavor, the grittiness of this lemon is comparable with how puckered your lips may be. Sour Skittle lovers may be enthused with Lemon, others beware of the acidic pleasures of a citric life.
Raspberry & White Chocolate Twist

On a day of melancholy proportion, does a flavor of berry enthuse me. A subtle, wafting chocolate flavor envelopes a succinctly sweet and tart raspberry, plucked out of a orchard. White Chocolate, as its muted muse, inspires Raspberry to seductively unravel its membrane, and embrace a subtle, yet sweet underbelly. I was not enthralled by this combination upon the first listen, but the combination of a slightly alkaline, yet tart fruit flavor enveloped with the milkiness of chocolate was worth it.
Strawberry Basil & Sweet Milk Twist

A herbaceous addition to a true classic, the Strawberry Basil retains the industrious flavor of a fresh Ontario strawberry, while the suggestion of a forest lingers onto your mind. Combined with Sweet Milk, the strawberry morphs into a more timid, yet subtle flavor, stripping out sourness for a more tangy dress. Delectable in its own right, the basil feels overcrowded and decides to come back another day. Maybe next time they can leave more space for their own bretheren.
Coffee Ice Cream

A heavier note, the coffee ice cream lands on another summer’s day. A returning classic, I might add, but a diversion from the classic soft serve gelato. Coffee reveals itself to be of the orogenic type, folding itself with the layers of heavy cream and sugar, relaxing as the sun sets. For me, this dream is too creamy and light to immerse within. A stronger coffee note would have been appreciated, creamy in its own skin…
Passion Fruit & Guava Twist

A psychedelic twist of tropical lovers? I think so! Passion Fruit and Guava combine to form a idyllic partnership, a tango of Latin lovers making their way through a continental city in North America. However, they may have twisted their way too far — Passion Fruit’s sour underbelly scarring the surface of Guava’s soft and sweet interior. Trouble in paradise? A sweet, herbaceous dash might just save this relationship for me.

Pineapple’s herbaceous and slightly sassy cousin has arrived on my doorstep! Featuring the same classic pineapple taste, the flavor gains a fresh perspective with the addition of cilantro. Slightly cooling, the hints of cilantro evenly mixed into the gelato presents itself as the elevated version of a true classic. Last CA$6 Bar Ape 😔. To many, this flavor may remind you of the fairways on a scorching summer’s day. For me, this flavor reminds me of a humid day in Hong Kong. Tea is omnipresent, peeking out of the shadows of the dominant lemonade. I wish it was slightly more tea forward, but alas the pucker of a lemon overshadows the day. Although a true delight on this shockingly hot summer’s day, the tea flavor may have been better highlighted as a creamy component to mellow out lemon’s tortured cries.
Passion Fruit Coriander Seed & Sweet Milk Twist

Remember last week how I was not happy with how sour Passion Fruit ended up being? This week, the creators at Bar Ape mellow it down with a citrus twist – Coriander Seed. The Coriander Seed however, was barely detectable, a disappointment that I didn’t appreciate. However, the Sweet Milk was truly needed to bring out Passion Fruit’s tender floral notes, boosting the profile of this combination. In the end, a much better profile for my tart lovers, but not as herbaceous as I wanted it to be.
Gooseberry and Tahitian Vanilla Bean Twist

A summer burst meets a classic highlight with Gooseberry and Vanilla. I personally have never had a Gooseberry, so I was enthused to try it, to say the least. The Gooseberry was a generally sour, and fruity like flavor, with no discernable notes of fate. Tahitian Vanilla in comparison, was a rich, wealthy flavor, full of laughs and French sunshine in Tahiti. A well executed vanilla dream. A perfect combination with the Gooseberry, a sour flavor highlighted with the dreamy waves of Vanilla. Compared to other milky combos, a stronger yet creamy partner makes perfect sense.
Golden Raspberry & Sweet Milk Twist

The spiritual successor to the much beloved Raspberry & White Chocolate Twist, Golden Raspberry brings along hints of a mildly tart Raspberry in a dreamy yet creamy twist. The overall profile pulls through with a much lighter and sweeter Raspberry that is paired well with a nurturing Sweet Milk. I did enjoy it, but I would prefer if the ratio of Golden Raspberry was more prominent to highlight the subtly tangy berry profile; although sublime, sweet milk presents itself as a bit overpowering to the senses.
Gooseberry Rose Thyme

A contrived herbaceous elixir arises with the combination of Gooseberry and Rose Thyme. Gooseberry’s tangy flavors burst onto the horizon, no longer offended by Tahitian Vanilla’s blaze. A twinge of Thyme nurtures itself into existence, bringing a slight numbing hit to the mouth. A subtle yet effervescent floral note arises at the back of your nose. At the end of the day, the flavor was unique, but may have benefitted from a stronger presence of thyme to highlight the sensation of plucked berries.
Toasted Coconut

On first interaction: Super nutty! The flavor description is very apt. Soft, velvety flavors envelop a light coconut core. With the toasted flavor, the coconut is elevated with a nutty undertone, reminiscent of a flaky almond pastry. Although complex in flavor, this flavor is not complex in tones. A linear masterpiece, it is best enjoyed in light interactions, as it proves to be heavy in large doses.
LIme & Crema Twist

A tart delight, the Lime & Crema twist unite to highlight the beauty of a citrus day. Lime presents itself as a linear vision of a slightly fruity and tart leader of the brigade, combining itself with Crema’s slightly eggy and creamy taste. For me, it’s reminiscent of a Sprite Float – a summer treat for a lovely summer’s day. On a side note, I had this flavor twice – once during the day, and once during the night. The former version was much less tart compared to the latter, which was much more enjoyable for me as it didn’t take over the light milky flavor of the Crema.
Ontario Apricot & Toasted Almond Twist

Deliciously nutty, Almond and Apricot join forces to create a toasty and light summer treat. Toasted Almond is rich, a replica of warm almonds on a hot plate. The almond is a delicate and light flavor, distinctly homely with a light amount of roast to bring the flavor home. Apricot is a light and slightly sweet flavor, with notes of a tangy fruit and a faint floral. Combined, they provide a warm relief to the heat – delicately sweet, and not too overwhelming. A refreshing flavor to round out the summer.
Coffee & Zabaglione Twist

Is this just coffee, egg yolks, and wine? Yes! I personally liked this flavor because coffee was somehow LESS creamy despite being mixed with more cream and less coffee flavor. I did not taste the fortified wine in this flavor. Overall, a solid flavor, but nothing special for me.
Sour Cherry & Brown Butter Twist

This was a gorgeous flavor from start to finish. A warm, fruity cherry with a solid level of tartness meets the creamy, toasted brown butter. The slight caramelization of the brown butter flavor really highlights the fruity notes of the sour cherry, making it pop out in contrast to the other sour flavors this season. There exists a depth of a warm, buttery, and fruity flavor that reminds me of Raspberry & White Chocolate. This flavor is representative of the work a twist can accomplish – combining a deeply traditional flavor, and highlighting its soft zones not found solo. The flavors alone would not nearly taste as good.
Thai Mango Sticky Rice

PRO TIP: They say “ready to eat”, but let it sit out for 5-10 minutes. You want the sauce to melt a bit to meld into the gelato.
A surprisingly accurate representation of mango sticky rice, the coconut was elegant and only slightly less coconutty than its soft serve counterpart. The toasted rice on top was a beautiful touch, it added a beautiful burst of flavor when mixed into the mango sauce. The mango sauce was decent, not too sweet, with a Alphonso mango profile. Overall, still prefer the soft serve, but this was good nonetheless.
Cantaloupe

A gorgeous take on the cantaloupe, this flavor is bursting with a sweet floral flavor. Although it cannot replicate the feeling of biting into a watermelon, it still brings out the honey-like flavor of a sweet, mild melon. Stunningly accurate in flavor, the gelato form brings a silky smooth take on a classic summer melon. Cantaloupe comes with a optional Fior di Latte twist, which I don’t think it needs as it is already so milky.
Saturn Peach

Upon initial reaction, Saturn Peach brings me back to a day on the orchard. Fresh, illustrious, and an overtly sweet peach dominates the mouth, bringing in a perfect peach to the table. In a way, it proves to be too realistic for the palate – as this flavor’s sweet and fruity presentation proves to be too linear as time goes on. The sweetness of this flavor is meant to be savored in two bites – do not overwhelm the senses of an otherwise immaculate flavor.
Blueberry & Pie Crust Twist

A reactive and unique flavor, this flavor accurately emulates the flavor of a fresh Blueberry Pie. Pie Crust is overtly malty at times, bringing in a grainy yet familiar flavor. However, its presence highlights baked goods in a way that leaves an astringent feeling to the senses – the feeling of missed pie. I would recommend less pie and more blueberry to balance out the tango, as in a way the pie overwhelms the fruity and mysterious Blueberry.

It’s Blueberry season here at Bar Ape, and with that they bring in fresh, lucent berry flavors to the table. Blueberry is once again one of those ideally realistic flavors that manages to dust off the table of a perfect berry gelato. With a light hint of a acidic note balancing out the sweet berry, Blueberry is a ideal companion to a late summer’s day – the one that reminds you to reminisce all of the good times.
Blood Orange & Rich Chocolate Twist

On a night of full moons and good laughs, the Blood Orange and Rich Chocolate twist evokes a dark laughter around a jubilant campfire. Blood Orange brings a rich, almost floral like flavor along Rich Chocolate; a rich, seditious energy to an otherwise simple twist. It most reminds me of a certain childhood memory of Chocolate Orange Fingers. An unique and enjoyable conversation can be had in the arms of this flavor.
Salted Pineapple Mint

A familiar cousin to the Pineapple Cilantro, the Salted Pineapple & Mint brings a level of freshness to the eve of a warm summer’s day. A lighter and more refreshing version of pineapple, the flavor mellows out to reveal itself to the senses of sweet mint, bringing a much needed sensation of a light, cool touch. The perfect accompaniment to cap off the trek required to get to this point.
Niagara Grape & Hazelnut Twist

On the crisp edge of autumn, Niagara Grape and Hazelnut unite to perform the vows for summer’s last bow. Idyllic in nature, a warm hazelnut (reminiscent of a certain hazelnut spread) twists the line with a mild, yet overtly floral grape. Combined, they remind viewers of other classic combinations. Perhaps a PB&J? Alas, this flavor shines in highlighting the power of a fruity gelato. Ultimately, this flavor would have shined just a bit more if the grape was able to fight through a overpowered hazelnut.
Cereal MIlk & Cinnamon Twist

A light, milky gelato provides a base to a mysterious flavor of sorts… Cereal Milk? What might that be? To me, it’s a slight rendition of Cinnamon Toast Crunch, obviously. A very solid flavor, although nothing in particular stands out. NOTE: I did ask for it twisted, but it doesn’t really look like a twist? Granted, these two flavors are probably pretty similar in color, but I didn’t get a chance to actually ask. This may just be one single flavor.
Louisa Plum & Vanilla Bean Twist

Representative of a precocious season, this flavor highlights a life lived mildly – a Vanilla Bean forward flavor with the light touches of a mild plum adding some sour notes to an otherwise typical palate. This flavor is best enjoyed as an accompaniment to any shoulder season, as it provides a transitional energy to its holder.
Pear & Pumpkin Seed Twist

An autumnal flavor in jest, the Pear and Pumpkin Seed Twist brings back memories of a blossoming fall. A delicate Pumpkin Seed flavor brings out an exact replica of pear (it’s kind of strange how they nailed the gritty pear texture?). Unlike other flavors, this twist builds on the mildness that this transitional season propagates. Not dramatic or sour, this flavor brings on the fruity, creamy ideals, leaving a poignant nutty aftertaste in it’s wake.

It’s just cone. My mother is particularly fond of eating sugar cones with a hint of iced cream, and I don’t think she would be particularly fond of this one. It’s a unique flavor of sorts, elevating what typically is a vehicle of flavors into a flavor of its own, but a cone is a vehicle for a reason. I would have liked to see this flavor shaped a bit, incorporating hints of cardamon and late-summer florals to highlight what makes cone truly special.
Bread & Butter

Collab with Restaurant 20 Victoria
Despite being a simple dish, this flavor carries a portmanteau of ideas into a sweet milk gelato. Hints of buttery bread are accompanied with warm, toasted butter – light enough to be palatable in this environment, but with richness that blends in with the existing sweet milk base. Although rich in flavor, it’s still surprisingly light, not overwhelming the senses, making it a perfect treat for dairy lovers. If you’re looking for balance, may I suggest you steer away, and go towards the status quo.
Blueberry Yogurt & Raspberry Yogurt Twist

A simple classic, a flavorful yogurt never fails to delight. Unlike a traditional fruity twist, these flavors combine the slight tartness of yogurt to form a uniquely milkier version of a mixed berry yogurt parfait. In addition, it tastes like Gerber® Organic Yogurt Drops, which is my favorite snack targeted towards babies. Ultimately, although this may not be the most innovative flavor, it is one that represents the whimsy of Bar Ape – taking classic items and elevating it using high quality ingredients.
Orange Carrot With Sweet Milk Twist

As they say on St. Clair… this is a Fall Creamsicle. But is it really? I came to Bar Ape on Nuit Blanche to find out. Overall, I agree! It tastes just like a creamsicle, which is one of my favorite flavors of ice cream (shoutout Ruru Baked’s Orange Creamsicle). However, it is permeant to note that it was a hint of carrot at best. I find carrots to have a slighty astringent flavor with a slightly sweet and herby flavor, which I did not note at all. I found that it tastes just like a creamsicle, WHICH is fine, but I have no idea where the carrot went.
Apple Crisp & Toasted Rice Twist

Toasted Rice is finally back on the rotation this week! However, this is mostly about Apple Cider. It tastes exactly like crisp apple cider… but somehow the texture is just a bit off. It tastes like a Cosmic Crisp apple but mushy. It was not as satisfying of a flavor as a result, but combined with the Toasted Rice, it was a warm and hearty flavor fit for the season of falling leaves. I really enjoyed the combination, but a desperate improvement of texture is not contemplated.

As it suggests, Toasted Rice is just that – Toasted Rice. However, it presents itself as a creamy, gorgeous and perfectly nutty version of rice, bringing out subtle floral notes in the cream. A true classic in my eyes, due to it’s complexity being so hidden. Unlike the ALLEGED rice pudding money laundering front in NYC, Toasted Rice is a great example on how to make a classic item opulent without the added twists. Anise & Almond Bar

Honestly? This was a really good ice cream bar. Your typical sweet milk ice cream enveloped with white chocolate, but the anise added such a sharp and savory flavor that worked so well. I use star anise all the time, so it was such a lovely surprise to see it used in a sweet environment. I love almond, and crushed up almond always works well in a bar. I still prefer the soft serve, but this was such a delight.

What are you including in your Bar Ape reviews?
At this time, we are reviewing all food items at Bar Ape, including Gelato Soft Serve, Special Feature Soft Serve, Gelato Bars, Daily Feature, Sundaes, and Take Home Cups.
Although our team has been a long time supporter of Bar Ape, we have decided not to include reviews from past seasons (before Season 11). This is due to the fact that the reviews would not be current to our taste profile. We are anticipating returning flavors and will review them when the time comes.
